3 Ingredient Recipe Desserts

How simple can this be? This dessert is an old (vintage :-)) type dessert and as with many of its Rhubarb_Strawberry_mousseera is quite simple to make.  Summer’s best friends Rhubarb and Strawberry mix well together in this spectacular mousse.

There is no real challenge to making this Rhubarb-Strawberry mousse, it has fewer ingredients than most desserts, less mess to clean up and less can go wrong in the creation (hopefully!)

Utensils

1 x pot and a wooden spoon and a serving dish

Ingredients

1 x packet of strawberry jelly

2 x bunches of rhubarb stems, washed and chopping equally in size

50mls of water

50mls of Heavy Cream

Method

Wash and prepare the rhubarb into slices before adding to a pot of water.

Gently simmer the rhubarb for approx. 20 mins or until the rhubarb begins to soften.

Break up the jelly cubes and add to the rhubarb stirring constantly, do not allow to boil.

When the jelly is fully dissolved, and the rhubarb is soft remove from the heat.

Taste for sweetness and if too tarty (this will depend on the rhubarb) you can add some sugar a little at a time to the required taste.

Allow the rhubarb to cool before slowly and evenly combine the cream.

Transfer the mixture to a serving bowl and refrigerate until set, approximately 2 hours.

Serving SuggestionRhubarb_Strawberry_Pie

Serve with shortbread cookies, whipped cream and fresh strawberries.

Alternatively, you could serve on a bed of sliced strawberries and crumbled cookies.

There you have it, a simple and easy 3 ingredient dessert to share and enjoy, you will be amazed just how tasty this quick and simple dessert is.

    Thank you for your very simple 3 ingredient dessert. Is it possible to substitute the rhubarb as I’m not a fan. What would make a good replacement fruit? I like most fruit but not rhubarb or gooseberry. I’d quite like to try making this, I’m a terrible cook but with 3 ingredients how hard can it be? 

    I might try mango as it’s my fave, thanks for enticing me into the kitchen, krs PurpleLioness

      I think you can certainly substitute the rhubarb for something you do like, maybe raspberries or another not so sweet fruit.  Do let me know how you get on.
